I don't do a ton of baking, mostly because if we have fancy desserts in the house we eat fancy desserts. And that's not good. But I've been really getting into a weekend-domestic-goddess kind of vibe and have been working my way through my Pinterest "Sweet Tooth" board. Because I adore all things citrus, especially since it reminds me of France, these lemon bar muddy buddies caught my eye. They're a nice summery alternative to traditional chocolate peanut butter muddy buddies, although my mother would say it's blasphemy for me to even suggest that. B really loved these. The lemon curd and white chocolate mixture wants to clump up really badly, so you have to work hard to shake it on all the Chex pieces. Even so, some had big clumps of filling, while others only got a dusting of powdered sugar. Maybe it's just because I've never made any muddy buddies before and I'm not familiar with the technique. Regardless, the flavor is on point. I've also got a pumpkin spice muddy buddies recipe, a cinnamon churro muddy buddies recipe, and a peppermint bark muddy buddies recipe. 1/4 cup lemon curd 1/2 teaspoon lemon extract 1/4 cup butter 1 cup white chocolate chips or candy melts 8 cups Rice Chex cereal 2 cups powdered sugar directions: Melt butter, white chocolate, lemon curd, and lemon extract in a small pan over low heat. Stir constantly. Pour Rice Chex into a large (grocery size) paper bag and pour melted lemon mixture over it. Fold bag to seal and shake to coat cereal well. It tends to clump, so you may have to get your hands in there and mix it. Cool slightly. Then add half of powdered sugar to bag and shake to coat. Add remaining powdered sugar and shake to coat. Spread out on cookie sheet lined with wax paper to cool. nutrition: Heinous, but worth it from time to time. For 1/10 of the recipe, it's something like 350 calories.
