Really, that sums it up. There's no point to weather this cold unless there's snow, and there's really no point in snow/ice unless you get out of work, so basically in my world right now there's no point in cold weather. That's all I'll say about that. If you, like me, need to warm up somehow, try sweet and spicy bacon chicken. It's sweet. And spicy. And there's BACON. That's also all I'll say about that. Wherever you are, I hope you're saying warm and safe...and that your office actually gave you a day off work. If not, you have my sympathies. Go make chicken, anyway. I hear it goes well with pinot noir. Sweet and spicy bacon chickenIngredients:
4 chicken breasts cut into thirds (basically, make tenders) Bacon slices Salt and pepper to taste Chili powder Garlic powder Smoked paprika (not in original recipe) Cayenne pepper (also not in original recipe) Brown sugar Directions: Grease a baking dish with a splash or two of olive oil. Season each chicken tender with all the spices. Wrap a bacon slice around each tender. Roll each bacon-wrapped tender in brown sugar and place into an oven-proof dish. Bake at 400 degrees for 30-40 minutes, or until chicken is cooked through and bacon is nice and brown and crispy. Eat, and enjoy!
