I've come to the conclusion that if you say, with honesty and forethought, that you want something, God finds a way to deliver. For instance, as I repeatedly thought, "I'm too fat, I need to lose weight," in France, inevitably that weekend we would go somewhere and we would wind up hiking up some monument or dragging around luggage that weighs more than I do. The amount of stairs we encountered was directly correlated to the number of times my internal monologue had chanted, "I'm fat, I'm fat, I'm fat." So since in my last blog post I mentioned I wanted to be more authentic and share my mess-ups with you all...well, I got an opportunity. So those baked oatmeal cupcakes I told you about? And how the oven seemed to take so long to bake them, and they were still a little runny?
Turns out I only added 2 cups of oats instead of 2.5, and I added 2.25 cups of milk instead of 1.25. Yeahhhhhh. That'll make for some runny, hard-to-bake oatmeal cupcakes, all right. I wrote the ingredients in the blog correctly - I just didn't follow the instructions myself. There's a life lesson for you: always read the instructions. I felt like quite the idiot. I can read, but I sure didn't do a very good job of it. The good news is, in making another batch, I was able to make the pumpkin spice oatmeal cupcakes I suggested in my previous post. I just took out the banana, applesauce, and honey (because we were out of honey), and added a can of pumpkin and two tablespoons of brown sugar. And they were great! The texture was much better, although I think they need the honey instead of the brown sugar. It was missing a little something, but I was much closer to the mark. And I got a side of humility with my breakfast. So there you go - try the new cupcakes. Just make sure you read the instructions first :) xoxo, E
